Harvested by hand, primary fermentation 11 days in vats, with secondary fermentation and 8 months aging in small oak barrels, followed by 12 month aging in large oak barrels.
Sour cherry, black cherry, marzipan and herbs. Full bodied, peppery, wild cherry, fine sweetness, rich, good aging potential and a versatile accompaniment to food!
