The first wine of our experimental series: "Vin Jaune", the Yellow Wine, is a style that originates in the French Jura. The wine matures oxidatively in a small wooden barrel and starts to develop a golden-yellow hue, hence the name. The wood of the barrel allows a bit of evaporation through its fine pores. The amount of wine slowly shrinks and must not be refilled in this form of vinification. Meanwhile, a layer of flor yeast forms on top of the liquid. After 16 years a only small and concentrated part of the original volume remains. A unique world of taste is born.

The Grüner Veltliner grapes of this wine have been selectivly harvested by hand in November 2002. Destemmed and crushed. Without sulphurisation. Spontaneous fermentation in a small barrel. Matured in barrel for 16 years under the controlled influence of oxygen. Bottled at high atmospheric pressure during the waxing moon in August 2018.
The nose reveals an unknown world slightly reminding of sherry. Smoky and herbal it rises from the glass. Yellow apple, spices, dark bread, in the background wood and yeast, as well as walnuts and some roasted almonds. A herbal tea extract on the palate, ripe pears, some raisins, the refreshing acidity vibrates on the tounge, long and nutty finish. A completely new experience.
