Pinot Noir G-Stück 2020
Wine made the way it was made 1000 years ago. This Pinot Noir is sourced from the historic vineyard sites of Thal and Käferberg, where the vines grow on calcareous clays, sands, and crystalline rocks. The "G" stands for the German word "Ganz" (= "whole"). The grapes are selectively hand-picked and fermented as a "whole piece" ("Ganzes Stück"), with the stems. This technique is ancient. Once the fermentation has started, there is no mechanical interaction, and the grapes are left to ferment gently and slowly. When fermentation is complete, we press the grapes, extracting all the sugar from the still-closed berries, and then ferment the juice dry in small oak barrels. The result is an authentic, complex and fluid expression of the terroir with which we work.
The artwork on the label has been created by the young South Tyrolean artist Julian Oberhofer.

Vinification
Selectively harvested by hand during the end of September. The whole grapes (with stems) ferment in small, open vats. While one part of them is crushed, the other part remains untouched (the berries ferment in their own skin; intercellular). Pigeage exclusively by hand. Pressed off gently after 2 weeks. Final fermentation in small used oak barrel. Matured on the lees for two years. Bottled unfiltered at high atmospheric pressure during the waxing moon in April 2023. 100% artisanal.
Wine description
Wide and individual aroma, red berries in the core, cranberries, some raspberry notes, also rose hip, then follow lower frequencies, deep and spice herbal note, roasted almonds and cornel cherries, slightly smoky. The palate is cool and fresh, with refined aromas of cranberries, cherries and mediterranean herbs, juicy and filigree with fantastic grip in the long finish.
