We present to you the first wine of our experimental wine series.

“Vin Jaune”, the Yellow Wine, is a style that originates in the French Jura. The wine matures oxidatively in a small wooden barrel and starts to develop a golden-yellow hue, hence the name. The wood of the barrel allows a bit of evaporation through its fine pores. The amount of wine slowly shrinks and must not be refilled in this method of vinification. Meanwhile, a layer of yeast forms on top of the liquid. After 16 years only a small part of the original wine remains. A unique world of taste is born.
